Ingredients

  • 8 chicken thighs
  • 1/2 cup apricot preserves
  • 1/4 cup cup balsamic vinegar
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 clove garlic, minced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and freshly ground black pepper, to taste
  • 2 green onions, thinly sliced for garnish
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil or parchment paper and set aside.

  2. In a small saucepan over low heat, combine the apricot preserves, balsamic vinegar, olive oil, soy sauce, and minced garlic. Stir the mixture until the preserves have melted and the sauce is smooth. Remove from heat and set aside.

  3. Pat the chicken thighs dry with paper towels and season them with salt, pepper, dried thyme, and dried rosemary. Ensure that the seasonings are evenly distributed.

  4. Place the seasoned chicken thighs skin-side up on the prepared baking sheet, leaving enough space between each piece.

  5. Using a pastry brush or spoon, generously glaze each chicken thigh with the apricot-balsamic sauce.

  6. Transfer the baking sheet to the preheated oven and bake for 35-40 minutes, or until the chicken thighs are cooked through and reach an internal temperature of 165°F (74°C).

  7. Remove the chicken thighs from the oven and let them rest for 5 minutes.

  8. Transfer the chicken thighs to a serving platter and garnish with sliced green onions and chopped parsley, if desired.

  9. Serve the chicken thighs with your favorite side dishes, such as roasted vegetables or a fresh green salad.
